Hi


Just wondering how long will a madeira sponge keep for after defrosting and once covered with fondant etc.

I'm not familiar with that type of cake but in general most cakes will last 3 to 5 days at room temp.

Follow the steps
  1. Bake the cake and cool each layer on a wire cake rack.
  2. Wrap each layer in plastic wrap. I usually wrap it with two pieces to make sure it is covered well.
  3. Wrap each layer with aluminum foil.

Other way.

Determine what kind of cake you're freezing. Most cakes will freeze well due to the high fat content in them. If your cake doesn't have fat (like fat-free cakes), it won't freeze well and you should avoid putting it in the freezer.

Select the right wrapping to freeze it in. Your cake has to be protected from freezer condensation, so using a moisture-proof wrapping is key to preserve your cake's flavor and texture.
