Can anyone share what is the best chocolate cake recipe for a stacked cake that will be carved as well 

I want a tried and tested recipe that won't collapse but it tasty and moist

for moist you need to not overbake --

for 'won't collapse' don't fill your cake pans too full -- follow this chart for best results:

Thank you 

this is the cake recipe I have been using exactly but from a different recipe book 

the problem I had with it when I last made it was that our humidity was at 95% and when I took it out the oven it looked wonderful was high and then shrunk to half of what it was and was so dense that it looked raw and uncooked  any suggestions

no i don't know -- our humidity is real high here too  --

but if you don't mind using a cake mix this is a brilliant cake formula and you can use any flavor cake mix and any flavor ice cream -- i've used chocolate/chocolate and it is wonderful -- the texture is in between a pound cake and a regular layer cake --

I use that same recipe with some modifications. Decrease the leavening to 1tsp each and the boiling water to 3/4c (use coffee instead for a treat!). I also use buttermilk or sour cream instead of the milk. Our humidity is high here as well. I never knew it was good for carving, just that it's really tasty! I found out about these changes on these forums. :)

Here is my recipe and I also live in high humidity.

1/3 cup of cocoa

one box choc cake mix

one cup flour

one cup sugar

one cup sour cream

4 eggs

dash salt

1/3 cup oil

one box choc pudding

1/3 cup strong coffee (or 4 tb instant coffee disolved in water.)
