I am decorating a cake on Saturday for a party on Sunday. I completely forgot I had to go out of town Fri and won't be home until the afternoon of Saturday. This is going to take out a big chunk of my prep time. I crumb coat, let sit for a few hours, apply the buttercream, let sit in fridge for about an hour, and then smooth it down. Then I decorate.
if I crumb coat the cake Thursday morning, and then store it in the fridge, will it stay fresh until Saturday afternoon?
Better to stick it in the freezer.
