It's been a very long time since I've decorated with fondant.  I have three cakes due the same day to the same location for the same party.  How far in advance can I cover in fondant? Then do final decorations day before party.

Red velvet with chocolate ganache, chocolate with chocolate ganache and cookies and cream with cookies and cream filling

Thank you. They're due on a Sunday, so I thought I'd cover Friday, decorate Saturday and then done.  Thoughts? Figure I'll bake Tuesday and Wednesday.

sounds right -- when i bake early in the week and i always did i filled and assembled the cakes then wrapped them up like a mummy and froze them till i iced & decorated -- i wouldn't want to let them sit out for 6 days till serving -- freezing suspends the staling process and refrigeration speeds it up so i recommend that you freeze them for a few days there --

they sound delicious -- best to you
