i mean a fruit cake takes forever to bake - i'm sure i'd use a thermometer for that -- and most any other cake except cheesecake i would not try to bake in one pan that deep -- i'd bake two cakes to get the height i wanted --

3" of my kind of cake batter won't bake right -- it will over bake around the edges and sink in the middle and not bake off be all gooey/gummy --

another exception is pound cake -- and i could do 3" of pound cake batter but it would need to be in some kind of tube/bundt pan --
