I have seen a whole bunch of heels/shoes and other pieces that are made out of gumpaste. I have only used fondant so far with my pieces I make but want the best outcome for my future one's as well. Any advice on which is better to use to mold and why gumpaste is used over fondant for different cake decorations?

Gumpaste dries faster, harder, and stays that way when compared to fondant.  Fondant is very prone to attracting moisture and often when it seems dry, it's not dry all the way thru.  Fondant also melts in extreme heat because of this, but gumpaste generally does not because the gums and drying agents in it make it so solid.  Both mold about the same way, but you do have to work faster with gumpaste.

I see!! Good points it does tend to still be flimsy and not completely hard when I need it to be done haha thanks!!
