Hope this gets posted. Some type computer problem posting. Re: gingerbread recipes...opinions welcome please.           Option 1) typical flour, spices etc. as dry ingredients. Applesauce, orange juice & zest, egg-free sweetened w/reg sugar.     Option 2) again, typical flour, spices etc. as dry ingredients. Eggs included, buttermilk, molasses and dark brown sugar.       Option 3) MUCH the same as option 2 w/more spice & less sugar/molasses. Which would be your pick? I am no expert on gingerbread, although I do have a good gingersnap recipe. :) Will be giving as gifts & do not want all the trial bread wasted or left over. Ideas?

I'd stick with the middle one, keeping it simple, but then I'd decorate the top of each piece with slices of ginger, crystalised fruit etc, to make it festive if it's for "giving". You could add some nice spice orange glace icing, etc on top of some too? I tend to find the more "interesting" I make things like this, the more I find out how picky some people are.... they don't like raisins, don't like cinnamon, etc... maddening! If you are going to so much trouble to make a lovely gift like this at least if you make your variety/flavour options on the top of it they can take it off if they don't like it.
