Is it better to use Gum paste or Fondant to decorate?

It depends on what you are making.

Fondant is typically used to cover a cake, or make edible decorations that are part of the cake.

Gum paste dries very hard and is great for flowers and other decorations that are added to the cake, but can be removed before cutting.   Gum paste is not meant to be eaten.

I use Fondant and add a little tylose powder, just to make a a little more firmer

And if you need the fondant to be firm make your flowers or decorations a few days aheadto give it time to dry Or like cupcake girl2005 said add tylose powder. That's what I do also if I don't have time to wait.
