Is it ok to use a stainless steel bench scraper on an aluminum sheet pan? I'm concerned it's going to strip up little bits of aluminum into my working area which is the sheet pan.

it will probably cut little pieces of the pan off, I wouldn't do it unless you were super careful.

my sheet pans are not true enough to use a metal bench scraper -- i use plastic ones on there -- but i could use a metal bench scraper on my cookie sheets which do not warp and are very true nice & flat --

is this for cleaning them?  i use baking soda and a little soapy water and everything comes off there --

not sure what you mean by your working area is the sheet pan
