I just filled and ganached a cake. then the customer cancelled. I do however have a customer next week that I can use this cake for..it will be a total of 8 days from baking to delivery. Will the cake stay good? What is the best way to store it?
Freeze it! Put it in a box, wrap it really well with plastic wrap and then with foil. Put it in the fridge a full day still wrapped and then on the counter for a few hours, unwrapping right before pick up. You may need to change out the box as it will absorb some moisture from the thawing process.
