I have been asked to make a birthday cake for a little boy. It is a chocolate cake, designed to look like a castle with 4 or 5 1" layers. Due to timing issues I have to use Betty Crocker Devil's Food Chocolate Cake Mix. I was planning on making 4 or 5 8" square cakes, and trimming each of them to 1" high.
I was just wondering, should i freeze or refrigerate the cakes overnight to help with stacking, carving and leveling? Is it better to freeze or refrigerate? Should I ice the cake with BC once its thawed or when its frozen?
