As the title implies: can I use regular vegetable oil OR lauric oil (refined coconut oil) instead of shortening? I don't want to buy a tub of shortening just to use for fondant as I am not going to use it in my baked goods and buttercreams.

It probably depends on the recipe, but if you're making the basic fondant recipe with gelatin and confectioner's sugar there's not much shortening in it, so it should be fine.

Sorry, I forgot to say that I'm making marshmallow fondant.

Well, marshmallow fondant is just a shortcut because marshmallows are made with gelatin and sugar, so I'd guess that it would be okay.
