Question About French Macarons.

I am planning on baking some French macarons for my grandmother's birthday, but I have a small oven (30L capacity) which can only fit 1 baking sheet with about 15 macarons. The recipe yields around 25 to 30 macarons. Question is; how long can I let the unbaked macarons stand at room temp?

Some people say you *should* allow them to sit for 30 minutes before baking. That theory has been disproven as necessary, but my point here is that if you do let them sit, you should be fine. You certainly won't ruin them. Just make them on the cookie sheet, and they should be fine when you're ready to bake.

Personally, I let them sit for 1/2 hour and then bake and they came out beautifully.  When I did not let them sit out to "set" they did not resemble a macaroon whatsoever.  So I say let them sit out and they should be fine.
