Hi all! I have a question as I am attempting to ship some cupcakes but I've noticed most people suggest freezing the cupcakes first. My cupcakes are to have a meringue frosting and I don't know if they will freeze well or if I should just freeze the cakes ND frost them before shipping. Let me know what you think, thanks!

It is not the cake that you need to worry about, it is the icing. If you have any extra cupcakes, try freezing it for awhile then pulling it out to see how it will perform. I've shipped plenty of cupcakes, freezing them overnight first. I tested to see how they defrosted and how they tasted before attempting to ship, and they were perfectly fine, and I also shipped them overnight.
