Hi all I'm new to baking cakes. My son's party is coming up and he wants a Red Velvet Michael Jordan Jersey cake. I'm looking for a scratch recipe that is to be made in a 11x15 pan. Should this cake be made in 2 layers? Also he wants red marshmallow fondant. I guess what I need is a step by step guide. Also his party is on Saturday do I need to get started today?

 Here is my recipe for Red MMF

Ingredients used:
10oz Generic Mini Marshmallows
Approximately 1 1/2 lbs Powdered Sugar, Sifted
4oz (approx 1/2 Cup) melted Wilton Red Candy Melts
1/3 tsp Americolor Super Red or whatever needed to get desired color
1 Tbs Water

Melt the candy melts    Melt the marshmallows separately

Add the melted candy melts to melted marshmallow and stir together

Add additional color to achieve the color you want

Stir it all together

Mix the melted mixture with the powder sugar and knead until all combined 

Coat well with shortening, wrap with plastic wrap and store in air tight container until ready to use.

I like to make the MMF a few days ahead of time.  I made mine yesterday for this coming Saturday. 

On the sheet cake my preference is to make 2 layers so I can put filling in between the layers
