Putting A Piece Of Real Cake In A Fake Cake

My best friend godmother to my two children wants me to make her wedding cake (due day after tomorrow, July 30th). I have made sheet cakes and decorated them with shells and a fake 3-tier cake based on her design.

How do I go about putting a real piece of cake in the fake cake??? I mistakenly covered the bottom tier in fondant, before cutting out a piece, so as soon as I go home today, I will strip off the fondant, cut the piece and re-cover...


The piece of real cake, should that be completely covered in fondant? I don't mind any "seams" as I will be putting sand (crushed cookies & brown sugar) on the bottom of each tier. Any seams visible in the front of the cake, we will just edit once the pics come in...

Should I ask that the whole cake be put in the fridge until it's time to bring it out, or should I ask them to just fridge the piece I will be putting in?
