Tips For Checkerboard Cake?

Hi all, 

I was planning to make a checkerboard cake (chocolate and vanilla), my cake layers are now in the freezer, but my layers are not as even as expected. When you cut out the concentric circles, do you first measure the height of the cake and use that as a guide for cutting out the circles? because I'd hate to end up with rectangles... the height of my cakes are just over an inch tall (I baked in 9" pans). Any tips and suggestions would be welcome...
