Anyone here make their own strawberry filling? And if so any tips on it?
How long in advance can I make it ? I am making a 10in cake and they want filling put in. I bought frozen strawberries
and I read some recipes for making it .
Any help would be greatful. I know I could just go the cake supply store and get some.

i place the berries in a heavy pot and cook them down with a peeled/cored/chopped granny smith apple (one apple per 10 - 12 oz of berries) and must be a tart apple s you get the pectin which helps it set up --
during the cook down I strain out the seeds and continue coming till the filling doesn't weep when a dab placed on a saucer & held sideways
you can add a bit of sugar, 2 tablespoons to a quarter cup and definitely a nice dash of lemon juice --
no thickener is needed because of the pectin in the apples but you could toss in a slurry of cornstarch if you want --
this is tart and crisp and bright tasting -- a perfect foil for the sweet icing & cake
