Hi all. I'm trying to make a banana cake for a baby, and so I'm trying not to use a lot of sugar, and use applesauce instead, etc. The recipe I used was just bananas, all-purpose flour, applesauce, baking soda, cinnamon. It cake out super dense though. Is that just the nature of the recipe? How do you get cakes to be more light and fluffy? Thanks!

Eggs will certainly make a difference but a recipe is about quantities and methodology.  Try beating an egg or two until light and fold in the other ingredients and see if you like it.
