Using Simple Syrup

Hi I am making simple syrup to help moisten my cake layers. This is my first time trying it. Do I spray the syrup on my layers before or after I level and tort them?

You level and torte them before brushing the simple syrup on the cake layers.

i made mine with vanilla extract - does that usually make it just a little strong?

I think it depends on how much you used. I don't usually flavour mine. But if you used proportions of 1 cup sugar and 1 cup water then I guess I would use about 1/4 teaspoon vanilla. If you added a bit too much vanilla, likely once the cake is iced, you won't notice it being too vanilla flavoured.
