Can I bake the cookies and then freeze them and when I defrost them can I cover with fondant  without the cookies becoming soft.  Any advice on this?  Appreciated

Personally, I would cut out the cookies and freeze them then bake off when I'm ready (especially if it was for a client).

But, I have frozen them before and they were still good.  Just make sure you wrap them well and put them in an air tight container.

Yep, you can freeze just about any kind of cookie after baking, just make sure they are sealed well. Freeze a few cookies to try it out :)
