I'm making cupcakes for a 1st birthday party tomorrow; Carnival themed. The cupcakes will be decorated with mini marshmallows to look like popcorn. Since I will be delivering them tomorrow morning, can I refrigerate them overnight, and will this dry out the marshmallows? One of the flavors is red velvet with cream cheese frosting. I'm debating as to whether or not I should use vanilla buttercream for all of them instead. (Chocolate, vanilla, red velvet). Thanks :)
I have never refrigerated marshmallows. If you need to do this by tomorrow do a trial and put a glob of buttercream and marshmallows on top and refrigerated for a few hours and see what happens.
