I'm planning to make chocolate mousse cups to put on a dessert table, and have been searching around for good recipes. There seem to be a few variations of how to make the mousse:
1. Just chocolate and whipped cream
2. Chocolate, egg yolks, egg whites and cream/milk
3. Chocolate, egg whites, water
Does anyone know how what are the differences in the outcomes of the above variations?
Also I'm hoping to be able to make these in advance but am not sure how much in advance I can stretch it to.
Last question, if I layer blueberry sauce on top of the mousse, do you think it will be too heavy and sink into the mousse?
