Hello CC,

My bride wants to save their top tier for 1 year but she wants IMBC.  Thoughts?  Advice?   Personally I dont think it is a good idea and would like to recommend either fresh repkica 1 yr later or use American BC.

Thank you!

Sure, she can freeze it an it'll be fine.

Box cake in cardboard box. Wrap box in several layers of saran wrap and a layer of foil.  Freeze.  24 hrs. before serving, place wrapped box in fridge.  A few hours before serving/display, place wrapped box on counter to come to room temp.  Right before serving, remove cake from box.  It will look and taste like it was just made.

Do you not have to wrap the cake itself as well?

No, I don't want anything touching the finish icing.  I don't want sweat to form between the wrapping and the cake surface and I don't want the icing marred when I remove the wrap.

This cake was frozen for 2 weeks [bow and # stored in a separate box at room temp] by the client using the instructions I provided above.

Wow!  Looks freshly made.  Feel much more confident about this now.

Thanks so much
