I'm in the middle of making a chocolate cake which I'm covering in Swiss Meringue Buttercream for my nephews birthday tomorrow.
I'm adding sprinkles to the top. Can I put the finished cake in the fridge until tomorrow or will that make the SMB sweat when it comes out the fridge?

It can go in the fridge or sit out. SMBC will sweat if there's a big temperature change as in if it's really hot where you live and you put it in the fridge. When you take it out into the hot weather it will sweat. If you put it in the fridge you will have the best results if you keep it in a cardboard box. The box will help to absorb extra moisture. If you have a controlled temperature you can just put it in a box and leave it out.
