I have a client that wants a 5 tier cheesecake wedding cake. I have a stand that will allow each cheesecake tier to be on and not stacked like a regular cake. My problem is that I cannot locate a 14 inch springform -the kind with the latch on the side to open and remove the cheesecake. I found one style pan that has a removable bottom, but not a 14" with the latch. I have spent hours and hours on the Internet and have not been able to locate one. Anybody know where I can find one?
you can bake in a regular cake pan and you can àlso stack & dowel them like any other tier cake -- you can bake one of the layers (per tier) crustless so you can just fill and stack - ganache makes a great filling --
when you bake in a regular pan you can insert a cardboard circle in the bottom to help facilitate removal and of course cheesecake freezes and thaws perfectly which makes handling easier --
