I just started making cakes and baked goods. I start pastry school soon, so I've been making a lot more things lately. I just finished my first batch of home made chocolate butter cream, and, well. It's not that good. I followed the wilton recipe. Does anyone have any better ones? Honestly, I like the canned stuff from the supermarket better.. or the huge buckets from sams club. I started making and selling cake pops and wanted to use all home made items. Now I not too sure.
Try an Italian meringue buttercream with chocolate in it. If you're following a Wilton recipe it's probably a shortening-based one, which isn't as good as the meringues as far as chocolate goes. The tub icings are even worse, but if you're going to culinary school for pastry you'll find that out soon enough.
You can also just use a ganache for cake pops, that would dry pretty hard and give you a good base for decorating them.
