Can anyone please suggest a good white chocolate for making ganache in the UK tried a number of different brands but so far not had much success I make sure not to boil the cream and try a 1:4 ratio if to stiff I add a bit more cream to get the right consistency but it never seems to firm up enough any help would be much appreciated
