I am making my first 2-tier fondant cake this weekend. Will be making chocolate fudge for bottom tier, and vanilla cake for top tier. I am using dark chocolate ganache for both tiers. Any ideas for flavor variations? I am thinking along vanilla cake + raspberry jam + dark chocolate ganache.
I will be decorating the cakes on Friday, and delivering on Sat late morning. I am not sure if SMBC can last for so many hours (am in a humid country!), so I won't be using it.
Raspberry, strawberry...they'll both work nicely and go really well with the chocolate. Personally I LOVE raspberry filling with vanilla cake :-)
