How can you keep the sides from browning before the middle starts to cook?

Bake even strips will insulate the sides and an upside down flower nail in the middle of the pan will help the center of the cake bake evenly.

Oh, 12" x 18" - make that two flower nails.

I've never had to use flower nails or bake even strips but I do bake at 325 instead of 350 which helps.
