Our family recently opened a small business and have heard conflicting information on the temperature our refrigerated display case should be set on. Our display case is used for cupcakes, cookies and cake pops. Could someone please verify the temperature this should be set to keep bakery fresh and a safe temperature. Thank you.
Temperature sensitive products (custards, creams, filled pastries, etc) should be held at 38-40 degrees F. If the case is used to extend shelf life, then approx 48 degrees F is fine. But I suggest you ask your inspector.
