I friend of mine asked me to make ten dozen cupcakes that taste like churro's for a party next Saturday.  I would appreciate any ideas or recipes.

I make cinnamon donut muffins - I just bake them with no liner (with a spoonful of jam inside the batter), dip the cooked muffins in melted butter and roll them in cinnamon sugar, they are unbelievably good. 

Could you top them with a chocolate or salted caramel drizzle to add in the sauces that churros can be dipped into?
