paper towels or fabric toweling or you can buy them -- these are soaked in water and wrung out and fastened to the outside of batter-filled cake pans so that when the cakes bake the heat penetration is slowed down around the outside so the middle has more of a chance to heat up at the same time and therefore the cakes bake without the hump -- works great --
some of the ones for purchase are called 'magic strips'
