I made the Italian Butter cream but it doen't seem to taste right not sure why, you can't seem to taste the sugar at all it taste to butterier.  Can anyone help

put a little bit of it in a bowl and stir in some vanilla and see if it improves

Italian meringue is very buttery until you put flavoring into it. You can put 3-5 ounces of liquer in per batch, or fruit preserves, citrus curds, peanut butter, anything pretty much. Also make sure that you use unsalted butter since salted will make the flavor of the butter really strong.
