I have to decorate a wedding cake for Friday and have a lemon cream cheese filling ... I'm wondering how early I can frost the cake and decorate.  The filling is made and in the fridge and I'm eager to get the decorating started.   Would it have to be refrigerated afterwards?  Thanks/

yes keep it cold -- it can be out of temp for 4 hours total before the bacteria multiply beyond the safe stage -- it won't taste bad but it could make someone sick -- like a little kid or the elderly or someone who already has a compromised system -- pregnant ladies --

the only way to be sure it is shelf stable is to make a recipe that is known to already be shelf stable --

i deliver cakes like this at the last minute -- the bride would already be advised with the reasons why so nobody freaks out --

thank you very much... since I'm the bride, I think I'll  just use some other filling... don't want to be stressed any more... worrying about sick guests..
