I'm trying to decide which would be better to make an Eiffel Tower cake topper: gumpaste or pastillage.
I've done one with gum paste which looked really neat and tidy but took me aaaages to cut precisely and assemble! I've made another one where I piped all the individual pieces with royal icing. And that was awesome. Done very quickly, by far not as much breakage as I thought I would have and looked great too.
