My great nephew just lost his daddy very suddenly and unexpectedly on Valentines Day. :-( His 4th birthday was the very next week, but his mommy (understandably) is just now feeling ready to tackle his birthday party with the family. He is really struggling with his grief, as he was a huge "Daddy's Boy." I have always made the cakes for his children and when I asked him what flavor he wanted this year, he immediately brightened up and said "Pancake Flavor!" I have found recipes for pancake flavor cupcakes (they all seem to just use pancake mix & milk), but am worried about it working as a cake layer. If a pancake flavored birthday cake is what will make this sweet little boy happy, I'm determined to find a way to make it!! Has anyone used/heard of a pancake flavored cake recipe? Thanks for the help!

What about actually stacking pancakes with maple BC filling?
I've thought about exactly what you suggested -- stacking large pancakes with maple buttercream. And whether or not it works for my nephew, that recipe looks delicious!! Thanks for the reply.
How about something like this? It's genius! It's a regular cake decorated with fondant to look like a stack of pancakes.
