Hi making my friends wedding cake and she wants one of the tiers to be fruit cake. I tried an online recipe and it was cooked on the outside and doughy on the centre and did not cut well at all. So that became a present for my dad to eat.
any recipies really welcome!!!

What size cake?
I use the recipe used for my own wedding cake 36 years ago (updated for metric measurements). It's abolutely glorious. It's still published in Good Housekeeping cookery books & has a chart for different sizes/shapes; maybe your local libray will have a copy.
I have adapted it - I substitute about 10% of flour with ground almonds and use more lemon juice than the recipe states adding all of it to the fruit to soak overnight.
