Hi all,

So i finally ran out of my beloved Chocopan gumpaste and can't seem to buy any more here in the UK :-(  So, went to the shops and bought what I was told was 'great stuff' - a tub of Satin Ice gumpaste.  Either I got a dodgy batch or i just really don't like it!!  It's very very soft and doesn't hold it's shape at all so I have to have a perfect mold for every little bit and it's really sticky.  I used to be able to make blossoms with my Chocopan, use the ball tool to curve it, put it on my mat and leave it and it would stay there...I do this with the SI and it just droops back to flat again.  So, 2 questions...

1) is this normal satin ice gumpaste behavior?

2) has anyone tried adding tylose to it to stiffen it up?

I'm about to chuck the whole lot away which I really don't want to do (it was darned expensive!) but it's just taking up loads of time atm...

Many thanks fellow bakers and decorators...

x

Sure. Just add some tylose to it until you get the consistency you like.  I'd start with 1/2 tsp./pound.
