Sugar Sheets Fondant Or Gumpaste

AI want to do a Vegas sign logo and decorations like chips cards and dice. Should I use sugar sheets for logo? How far ahead can I make decorations to use? What about a dimensional dice fondant or gum paste? I have never worked with sugar sheets before but seems it would be easily cut?

Any advice welcome

AFrom my experience (although I'm not a pro) a gumpaste would last longer & be more durable BUT it dries out very quickly. To make the gumpaste more pliable, you could use a 50/50 mix of both. That's what I use for flowers, gives me more time to do details :). Hope that helps! I'm sure some "pros" may have better advice!
