AHi, I am creating a cake soon similar to the[IMG][/IMG] attached. It will have a few elements which need to be created and hardened days before I put it all together like the top fan and the edges on the bottom tier.

Could someone please tell me what is best to use for this and a recipe would be wonderful. I've tried so many in the past but they either never firm up quite hard enough (slight bend to them).really hard to work with, or both.

Any help will be greatly appreciated.

AI would use gum paste. Beat one egg white, add 220g sift icing sugar (use mixer), mix for about 2 mins, add 3 level tsp cmc/ gum Tex, mix. Take out of mixing bowl onto with icing sugar dusted surface, knead well until you feel it has the right consistency (like play dough). Wrap in cling film, put in zip lock bag/ container and in the fridge for at least 12 hrs. When you take it out it's rock hard. Use a knife to cut of a piece and knead it with your hands, it will become soft again.
