I tried using golden syrup and all I can say is YUCK!! And then I found this recipe (can't remember where from) but its great!

Ingredients
30g of water
50g of icing sugar
100g liquid glucose
400g white chocolate (tried a lot of different white chocolate, but found supermarket cheap own brand to be the best)

Method
1. Melt the chocolate
2. In a separate bowl add water, icing sugar, and glucose.
3. Add the melted chocolate.
4. Mix the dough until compacted
5. Leave to cool,
6. Wrap in plastic film. Leave to rest for 24 hours and its ready to use. Knead it and you will have a smooth paste

Here's a youtube video by a lady in the UK, who makes her own corn syrup.  It should work for you in making modeling chocolate.  I loved the way she put the pot on the scale and started pouring in sugar - it's exactly what I do.  corn syrup is clear, has no odor or flavor so when you add it to the chocolate all that you taste is the chocolate.
