I have lost my recipe for buttercookies using confectioners sugar and cake flour....do any of you have one like this? Thanks
My buttercookie recipe is simple, as follows:
500 g butter, softened
335 g flour (I use all purpose, but you could use cake flour)
220 g confectioners sugar
1 teaspoon vanilla extract (optional)
Cream the softened butter well with the sifted confectioners sugar and vanilla, then sift inn the flour and stir/whisk until it comes together nicely. I then roll the dough into a sausage and cut 1/4 - 1/5 inch thick pieces from it, place them on a tray with baking paper on and cook on 175 degrees C for 10-11 minutes. Some times I chill the tray in the fridge for 50-20 minutes before cooking, to try and avoid runout in the oven.
These cookies are delicious, and more often than half of them are gone pretty much straight out of the oven :-D
