Hello, I've been asked to do a wedding cake with three different flavours. The bottom tier is 12 inch chocolate, the middle tier is 10 inch vanilla and the top tier is 8 inch fruit. I have stacked cakes before but not fruit cake. I use boards and dowelling but I am wondering if I need to do anything differently this time around as the top tier will obviously be heavier than I am used to working with. Has anybody had any success with different methods or any tips they can share?

Just boards and dowelling is all you will need.  You can use more dowells if you are really concerned, I use either 6 or 4 depending on how many levels and how heavy the cake is (always 1 in the middle and an odd number around the outside).
