Coloring Stabilized Whipped Cream

I am going to be making a stabilized whipped cream and was wondering when to incorporate the color and what form of color should I use?  Wilton gel or a liquid food coloring?  I need to make a deep purple. 

Also this will be my first time making stabilized whipped cream, I will be using the recipe with gelatin in it.  Will this be strong enough to use a tip that pipes roses on top of a cake?

AI don't think you can make 'deep purple' with whipped cream or will it be strong enough to pipe flowers like bc. If in doubt, make a small batch and see if it works for you.
