Can I use chocolate ganache for brush embroidery. 

Will it set properly or will it be runny and also will it lose its shine?

 

If I can do you know any good recipes for chocolate ganache frosting?

I never tried, but my 1st thought would be to try with chocolate as is.   I know I've painted with colored chocolate when making molded chocolate.  I think you should have time between piping & then the brush embroidery if you do a little at a time & it would definitely dry hard.   And if you don't break the temper - it should still have the shine.
