 I made a batch of ganache, i iced one cake and it came out perfect and hard with a mat finish. I tried to ice the next cake from the same batch of ganache but it came out weird it was shiny and oily,like it was separating(thus the weeping part) and it dried with a gummy texture. What did I do wrong?

I think that's a bit of a mystery. You might get lots of different answers here, but it's hard to know. My latest batch came out the same - it seems to happen occasionally for no particular reason, even if you do the same as always.

 

You can still use it the same - did you taste yours? I find it tastes the same once dry - it's just hard to use because it's oily and doesn't stick to the cake as well as usual.

ASounds like it split, add s little warm cream (not hot, just warmed)?a little bit at a time and stir, should hopefully bring it back together.
