This customer wants Bavarian cream instead of butter cream. Does anyone have a good recipe? Does it set up like butter cream? Also which tip would I use to make these ruffles? Thank you!

no it does not set up -- bavarian cream will not pipe out and keep that definition -- it's a filling like pastry cream -- i would make those ruffles with a big wide rose tube
