AMy in laws family crave about Quenn Elizabeth cake (dates cake topped with shredded coconut and "sucre a la creme ") but it's not the kind of cake that I can decorate and make pretty! What I want to do is to cook the same dates cake, but to tort and fill it with a buttercream or a filling that would have about the same taste. Any suggestions? I was thinking about a whipped brown sugar buttercream with shredded coconut in it (not sure about the texture - will it be too "grainy" because of the shredded coconut?) or maybe using coconut milk in anyway? I'm kind of lost on that one... Thanks

AHello I would use a filling like a German choc leave.out the raisins. Make it as a caramel coconut filling. Make the caramel sauce in a cast iron frying pan with cream sleave and cool then make your filling marg
