I'm making a bday cake for tomorrow, using buttercream and fresh strawberries as filling, covering in fondant.  I'm afraid berries will go bad if I don't stick cake in fridge overnight but afraid of condensation ruining fondant and fondant decor.  Please advise!  Thanks!  I've never done a fresh fruit in the middle before.  TIA!

Put it in the fridge...The strawberries will get mushy and runny if you don't refrigerate them, and the fondant will dry out if you leave it alone once you take it out.

Thanks so much!  That's kind of what I thought but wanted to be sure!  It's for a very special lil girl, and I don't want her parents disappointed!
